๐ No Yeast Soda Bread Recipe - Keep Calm Bake On!
welcome friends welcome back to thekitchen another edition of stuff in our
cupboard pandemic pantry a lot of peoplehave been asking for a no yeast bread so
today we're gonna do a quick bread asoda bread now quick breads are an
entire class of baking that essentiallymakes a bread like product using baking
soda or baking powder as the leaveningagent instead of yeast much like a cake
would pretty much you know the line getssort of wishy-washy between cake and
quick bread especially when you get intosomething like banana bread a banana
bread is a quick bread so in here I'veput flour salt and baking soda and I've
just used all-purpose flour you coulduse bread flour you could use whole
wheat flour we have another soda breadrecipe way back on the channel and I'll
link to that below that uses whole wheatall-purpose and wheat bran it gives an
incredible loaf but I didn't want tobring that one back to the front because
I know people are having trouble right
noweven finding the basics even finding
just flour so if you have flour butdon't have yeast feel very lucky that
you can still make this bread I'm alsogoing to put in some sugar and some
butter and we want to cut the butterinto the flour much the same way you
would do if you were making a pie pastrycrust and of course you don't have to
use a food processor for this you couldput all of your dry ingredients in a big
bowl put in the butter and then just rubit between your hands or use a pastry
fork you'd come to the same place I havegot a lot going on I'm just a little bit
lazy today I want to speed things up soI'm using the food processor brings me
to my next problem umall of the recipes that you see for this
type of quick bread use buttermilk ormost all of them do or the really good
ones do they use buttermilk because thethe complex flavors in a North American
buttermilk are what add to thetenderness of the loaf and the flavor of
the loaf but I don't have buttermilk soI'm using a plain yogurt and I'm gonna
mix that with regular milk if you livesomewhere where you can get kefir use
kefir instead that would work absolutelyfantastic what you're looking for is the
acid to activate your the baking powderor the baking soda in this case baking
soda and the other flavors to tenderizethe bread now I can already hear people
screaming that their mother told them ortheir grandmother told them that if they
don't have buttermilk you should addvinegar to milk and I got to tell you
that's one of my huge pet peeves in thekitchen when you're doing that you're
making a situated milk and you're addingthe acid that will activate the baking
soda definitelyyou're not making buttermilk and really
you're still losing out on all of theflavors the other flavors that
buttermilk is bringing to the processbecause in North America buttermilk
stuff that you buy at the grocery storeit's a fermented milk product and it has
an incredible amount of flavor so inthis case if you don't have buttermilk
my order of substitution or preferenceof substitution would be kefir and if
you don't have kefir do what I did plainyogurt and milk if you don't have yogurt
maybe you have sour cream same sort ofthing you just put the sour cream in mix
it with the milk and as a last resortmake a situated milk with vinegar
sometimes you've got to do what you'vegot to do and I think probably this is
that time so flour into a big bowl andnow we're going to mix in our wet
ingredients and I just pour it in all atonce and then use a big spoon or spatula
to mix it into a dough now once you'vegot a big ball of dough put a little bit
of flour on your counter you still wantto knead this a little bit even though
it isn't a yeast bread and you don'twant to knead it the same amount
to do a yeast bread but you do want tobring it together a little bit and build
some gluten so a little bit of flour Ioften don't put too much flour when I'm
doing a yeast bread with this one I puta little bit more because it is a very
sticky dough and you just want to try tofold it and knead it until it comes
together a little bit and if it's reallysticking to your hand you can put a
little bit more flour but not much justbe very careful with it there we go two
or three minutesand it comes together really nicely now
if you wanted to you could just takethis ball of dough put it onto a baking
sheet maybe score the top and stick itin the oven and bake it as a round be
absolutely fine I'm gonna do mine in abread pan because I'm looking for a loaf
so this is just a matter of shaping itso that it fits into the pan and into
the pan now you're not going to be ableto shape this like you would a regular
loaf of bread it's it's not like thatbut I am going to score the top just to
help it expand a little bit we're goingto stick this in the oven
that's a pretty good-looking loaf yougot there Glen oh so uh sort of bread or
I don't know what else does it callquick bread it's called the quick ah a
lot of people would call it a yeast listbread fair enough um so this is not a
bread that I would use for sandwichesbut it's great for toast mm-hmm it is a
thick hearty bread mm-hmmit is you know it's got lots of crust it
is denseit has tends to be very flavorful rich
and moist slather that and butter alittle bit of jam and that is amazing
that is that is an incredible breakfastbread mm-hmm but it's really easy and I
know there's a lot of people who want tomake bread who can't get yeast so this
is it this is a kind of a greatin-between point that you can still have
something for breakfast and there's lotsof flexibility to it because it is a
loaf bread you can you could probablymotion them old mushy banana right or
you can throw in raisins or you can putin you know so you could even make it
savory you could put in some cardamomcaraway cardamom caraway or rosemary and
thyme yeah so you know it's a base thisis a bread that I would make again it's

๐ No Yeast Soda Bread Recipe - There are a lot of people in April 2020 that want to bake bread, but can't source yeast. Even flour has been tough to find. So we've updated one our earlier Irish Soda Bread Recipes, simplified the ingredients, and came up with this Noe Yeast Soda Bread Recipe. Ingredients: 620g (4ยผ cups) all-purpose flour 45 mL (3 Tbsp) granulated sugar 6 mL (1ยผ tsp) baking soda 5 mL (1 tsp) coarse salt 85g butter, cold and cubed 425 mL (1ยพ cups) buttermilk 1 egg Method: Preheat oven to 200ยบC (400ยฐF). 'Cut' or 'Rub' the butter into the flour, sugar, baking soda, and salt. You can do this by hand or in a food processor. Whisk the buttermilk and egg together. Combine the buttermilk and flour mixtures in a big bowl. Stir the dough together until it is too stiff to stir. Tun the dough out onto a lightly floured surface. Knead the dough for about 2-3 minutes; if the dough is too sticky, add a little more flour. Transfer the dough to a greased loaf pan. Score the top. Bake until golden brown and a cake tester comes out clean, about 45 minutes.
